Biscuits and Sausage Gravy

1Preheat oven to 425F.

2Combine all purpose or soft wheat flour and baking powder and kosher salt in a bowl.all purpose or soft wheat flour: 1 c, baking powder: 1/2 tbsp, kosher salt: 1/4 tsp

3Add heavy cream and mix into a shaggy dough.heavy cream: 5 oz

4Do not knead it.

5Dump it onto a floured work surface.

6Form it into a rough log about 3 inches wide and 9 inches long.

7Cut it into three biscuits with a sharp knife.

8Transfer to a baking sheet .

9Bake until golden brown, ⏱️ 15 minutes .

10Cook breakfast sausage in a skillet over medium-high heat, breaking it up with a wooden spoon until it’s no longer pink.breakfast sausage: 4 oz

11If the pan is very dry, add oil or butter .oil or butter: 2 tsp

12Add flour and stir to incorporate.flour: 1 tbsp

14Bring to a simmer while stirring frequently.

15Adjust the consistency with more heavy cream or milk if it’s too thick.
